RECIPE CONTEST:

Do you love seafood? I like some. I’m allergic to shrimp and I don’t eat crab or lobster for fear of my shrimp allergy translating across to other shellfish. But I do like fish - especially salmon. I LOOOOVE a good grilled salmon - all kind of buttery with crispy bits on the edges. Yum.

Do you love trying cook off recipes? The Louisiana Seafood Promotion & Marketing Board (LSPMB) and NOAA (National Oceanic and Atmospheric Association) presented the Fifth Annual Great American Seafood cook off Aug 2-3 in New Orleans and their website presents the five finalists. It’s hard for me to be sure about what my favorite is, since at least 3 of them have shrimp. But, thankfully, Colorado Chef Paul Anders created a recipe for Colorado Striped Bass Panzenella. It’s got fresh tomatoes & cucumbers, mint, basil, olives, ciabatta bread, and eggplant. It sounds so fresh - really like just out of the water fish with all these delicious fresh vegetables and herbs. I adore fresh basil and mint and it sounds like the combination would be delicious with the fish.

He does this wonderful crispy eggplant base and then tops that with a fresh herb yogurt. On top of that is panzenella that is made by toasting ciabatta bread with some olive oil in a pan and then mixing with the very ripest veggies & herbs to make a type of salad. This would work great with the fresh mint & basil I have growing in my herb pot!

Place the gently pan-fried bass on top and drizzle with balsamic vinegar and it’s done. This is simply the perfect summer meal. No real preservatives and everything used is fresh, natural and sustainable. If you live near a place where you can get fresh domestic-caught fish of any kind, what a wonderful, healthy choice for your family meal! Can you imagine catching your own bass in the morning and serving this meal with veggies and herbs from your own garden that evening? How cool would that be?
